I love the idea of lemon granola.
I’ve recently begun using whole organic lemons in my cooking. Reportedly the whole skin is nutritious and anti inflammatory.
I wonder if one could finely dice the lemon skin in lieu of making zest?

I’ve started using whole organic lemons in my cooking. The skin, yellow and pith, reportedly is high in anti inflammatory oils.
